Chilled Noodle Pancit Salad with Longanisa
Super simple mouthwatering dish
INGREDIENT LIST
1 pack FSA Longanisa Sausage
1# Pasta Pappone Thai Citrus Ginger Linguine
¼ cup Spanish Onion, sliced
½ cup Carrot, julienne
½ cup Green Cabbage, shredded
½ cup Snow peas, julienne
2 Green onions, chopped
For the Spicy Citrus Vinaigrette
¼ cup Sunday with Joe Spicy Arrabiata Sauce
2 Tbsp Tamari Soy Sauce
2 Tbsp Extra Virgin Olive Oil
1 Tbsp Lime juice
1 Tbsp Orange juice
1 tsp Garlic, grated
1 tsp Ginger, grated
DIRECTIONS
- Bring a pot of salted water to a boil. Add the pasta, stir to prevent sticking, cook according to package instructions until just tender. Rinse under cold water until the noodles are completely cold.
- Meanwhile, prepare the vinaigrette by combining all the ingredients in a bowl and whisk together.
- In a large bowl, toss the cooked pasta, vegetables and vinaigrette together and mix well to combine. Adjust seasoning with salt and pepper.
- Preheat the grill. Grill sausages for 2-3 minutes per side.
- Serve & enjoy.
