Chilled Noodle Pancit Salad with Longanisa

INGREDIENT LIST

1 pack FSA Longanisa Sausage

1# Pasta Pappone Thai Citrus Ginger Linguine

¼ cup Spanish Onion, sliced

½ cup Carrot, julienne

½ cup Green Cabbage, shredded

½ cup Snow peas, julienne

2 Green onions, chopped

 

For the Spicy Citrus Vinaigrette

¼ cup Sunday with Joe Spicy Arrabiata Sauce

2 Tbsp Tamari Soy Sauce

2 Tbsp Extra Virgin Olive Oil

1 Tbsp Lime juice

1 Tbsp Orange juice

1 tsp Garlic, grated

1 tsp Ginger, grated

 

DIRECTIONS

  1. Bring a pot of salted water to a boil. Add the pasta, stir to prevent sticking, cook according to package instructions until just tender. Rinse under cold water until the noodles are completely cold.
  2. Meanwhile, prepare the vinaigrette by combining all the ingredients in a bowl and whisk together.  
  3. In a large bowl, toss the cooked pasta, vegetables and vinaigrette together and mix well to combine.  Adjust seasoning with salt and pepper.   
  4. Preheat the grill.  Grill sausages for 2-3 minutes per side.  
  5. Serve & enjoy.
