Longanisa Garlic Fried Rice Bowl

INGREDIENT LIST
1 pack Four Star Artisan Longanisa Sausage
2 cups Jasmine Rice, steamed
4 ea large brown eggs
3 Tbsp extra virgin olive oil
3 cloves garlic , sliced very thin
4 ea green onions, chopped fine
¼ teaspoon kosher salt
½ teaspoon ground black pepper, freshly ground
4 tablespoon bread and butter pickles (see recipe or substitute grillos pickle chips)
4 tablespoon sweet chili jam (see recipe or substitute sriracha sauce)
½ cup cilantro, fresh picked
DIRECTIONS
- Bring a pot of water to a boil. Gently add eggs and cook for 7 minutes. Remove and place in a bowl filled with ice water to cool completely. Once cool, peel, cut in half and reserve.
- In a large saute pan over medium high heat add oil. Add garlic and lightly fry until edges are golden. Add the jasmine rice and mix to combine with garlic. Fry for 3-5 minutes until rice begins to brown and becomes crispy. Add the Season with salt and black pepper and combine. Finish with the chopped green onions.
- In a separate pan over medium-low heat add oil, brown the Longanisa sausages on all sides until warm in middle.About 3-5 minutes.
- To serve, portion rice to dinner bowls and top with sausage, bread and butter pickles, cilantro, red chili jam and poached egg. Enjoy!
Chef’s Tip: Use day old rice for a crispy fried rice.
